Ethan Helps Mommy Make Mango Bread





Mango Bread (from Jennifer Jennings)

2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3/4 c. cooking oil
1 tsp. vanilla
3 eggs
2 c. peeled, diced mango
1/4 c. walnuts
1/2 c. shredded coconut

Mix the dry ingredients (the first five). Make a well in the dry ingredients and add remaining ingredients. Mix well. Pour into two small or one large greased and sugared loaf pan(s). Allow to stand for 20 min, then bake at 350 for 1 hour.

Very cute! Maya likes cooking too, especially if she gets to play with REAL food!

I have to comment on these pictures... maybe should have put it in the post: I'm not sure why my floors look as clean, shiny and bright as they did in those pics... chalk it up to a great camera. Marti, I now recommend "cooking" with oats, not flour, for kiddos. But you probably knew that. :)
